Chopped Israeli Salad *

 2 diced cucumbers

2 cups diced tomato

1 diced orange bell pepper

1/2 cup chopped fresh flat leaf parsley

2 Tbsp fresh lemon juice

1 Tbsp EVOO

1 tsp kosher salt

1/4 tsp freshly ground black pepper

Place all ingredients in large bowl.  Stir to combine.  Refrigerate until ready to serve.  

Serves 6
