Meatball and Gravy Sandwiches *

 2 onions, sliced

24 oz frozen, fully cooked, meatballs

24 oz beef gravy

1 tsp ground nutmeg

8 hoagie buns

Spreadable butter

Provolone cheese slices

Place onions in crock pot  Add frozen meatballs and gravy.  Cover and cook on low heat for 8-10 hours. Stir in nutmeg.  Cut hoagie buns horizontally in half.  Spread butter on each half bread and place on baking sheet. Broil on low for about 2 minutes or until toasted to your preference.  Place one slice of cheese on the bottom of each bun.  Place 6 meatballs in each bun.  Top with gravy.

Breakfast Casserole *

 1 pound breakfast sausage, browned and drained

9 slices bread

9 eggs

1 tsp dry ground mustard

1 tsp salt

1 pound shredded cheddar cheese

2 cups milk

Spray 13x9 dish with nonstick cooking spray.  Cube slices of bread and place in casserole dish.  Place browned sausage on top of bread.  Mix eggs, mustard, salt, and milk together.  Pour over bread.  Top with cheese.  Bake at 350 degrees until knife inserted in middle comes out clean, about 30-45 minutes.  

*This can be prepared the night before and kept in refrigerator overnight*

Chicken Tortilla Casserole *

 1 can cream of chicken soup

1 can (4.5 oz) chopped green chiles

8 oz sour cream

1/2 cup milk

2 1/2 cups shredded or chopped chicken breast

8 yellow corn tortillas, torn into bite size pieces

1 green bell pepper, chopped

1 large tomato, chopped

1 1/2 cups shredded cheddar cheese

Heat oven to 350.  Spray 13x9 dish with cooking spray.  In large bowl, mix soup, chiles, sour cream and milk until well blended.  Stir in chicken, tortillas, and bell pepper.  Stir in tomato and 1 cup of the cheese.  Spoon and spread mixture in baking dish.  Cover with foil.  Bake 40 minutes.  Uncover; sprinkle with remaining 1/2 cup cheese.  Bake uncovered 5-10 minutes or until cheese is melted and mixture is bubbly.  Let stand 5 minutes before serving.

Creamy Roasted Garlic and Onion Meatballs *

 2 Tbsp butter

1 onion, cut into small wedges

2 Tbsp minced garlic

2 Tbsp all purpose flour

1/2 tsp pepper

2 cups half and half

1 pkg (16 oz) frozen meatballs

Chopped fresh parsley

Hot cooked rice or pasta, if desired to eat as meal rather than appetizer

In saucepan, melt butter over medium heat.  Cook onion and garlic in butter 10-12 minutes, stirring frequently, until golden brown.  Sprinkle flour and pepper over onion mixture.  Cook 1 minute, stirring constantly.  Slowly add half and half, stirring constantly.  Stir in meatballs.  Cook 15-20 minutes, stirring occasionally, until sauce is thickened and meatballs are hot.  Garnish with chopped fresh parsley.  If eating as main dish,, serve over rice or pasta.  If serving as appetizer, place in crock pot on warm or low.

Mac & Cheese Lasagna *

1 pkg Kraft Deluxe mac and cheese dinner, prepared per package directions

2 cups spaghetti sauce

1 pound lean ground beef, browned and drained

1 1/2 cups shredded mozzarella cheese

3 Tbsp grated parmesan cheese

Heat oven to 350.  Spoon half of the Deluxe dinner into lightly greased 8x10 dish.  Top with layers of half each sauce, meat and shredded cheese.  Repeat layers.  Sprinkle with parmesan.  Bake 20 minutes or until heated through.

Sloppy Joe Squares *

 2 pounds ground beef, browned and drained

2 cans sloppy joe sauce

2 cans buttery crescent rolls

2 cups shredded cheddar cheese

1 Tbsp sesame seeds

Heat oven to 350.  In large skillet, combine the cooked ground beef and sloppy joe sauce.  Heat to boiling, stirring occasionally.  Unroll 1 can of the dough and place in ungreased 13x9 dish.  Press in bottom and 1/2 inch up sides of dish  Spread beef mixture over dough.  Sprinkle with cheese.  Unroll second can of dough.  Place over cheese.  Sprinkle with sesame seed.  Bake 30-35 minutes or until mix is bubbly and dough is golden brown.  Cut into squares to serve.
