Tex Mex Steak and Rice *

1 1/2 pounds beef boneless round steak
1 cup beef broth
1 can diced tomatoes with green chiles, undrained
1 can black beans, rinsed and drained
2 tsp ground cumin
1/2 tsp salt
2 cloves garlic, minced
2 cups frozen stir fry bell peppers and onion mix
1 cup uncooked instant rice

Place beef in slow cooker.  Mix broth, tomatoes, beans, cumin, salt and garlic in a medium bowl; pour over beef.  Cover and cook on low for 7-8 hours.  Stir bell pepper mix and rice into slow cooker.  Increase heat to high.  Cover and cook for 20-30 minutes or until rice is tender.
