Chicken Minestrone

2 cups water
2 cups frozen Italian style vegetable combination
2 cans Italian style diced tomatoes, undrained
6 oz boneless skinless chicken breasts, cut into bite sized pieces
1 cup rotini pasta, uncooked
1 envelope Italian salad dressing and recipe mix
1/4 cup grated parmesan cheese

Mix all ingredients except Parmesan cheese in large saucepan.  Bring to boil on high heat, stirring occasionally.  Reduce heat to medium; simmer 10 minutes or until chicken is cooked through and pasta is tender, stirring occasionally.  Sprinkle each serving with 1 1/2 tsp of parmesan cheese.
