Mixed Roasted Vegetables *

1 eggplant, cut into 2 inch chunks
1 green bell pepper, cut into 1 inch pieces
1 red bell pepper, cut into 1 inch pieces
1 onion, cut into 8 wedges and separated into pieces
2 zucchini, cut into 1 inch pieces
1/2 pound whole fresh mushrooms
2 Tbsp basil
3 Tbsp olive oil
2 Tbsp red wine vinegar
1 tsp oregano
1/2 tsp salt
1/4 tsp pepper
1 tomato, seeded and cut into 2 inch pieces
Grated parmesan cheese

Heat oven to 350.  Place vegetables in 3 quart baking dish.  Sprinkle with basil.  Mix oil, vinegar, oregano, salt and pepper.  Drizzle evenly over vegetables.  Bake uncovered 30 minutes.  Add tomato; toss to coat.  Bake uncovered 15 minutes.  Sprinkle with cheese.
