Mixed Berry Crisp

Berry Filling:
2 Tsp sugar
2 Tbsp cornstarch
2 cups frozen mixed berries, thawed

Crisp Topping:
1/2 cup old fashioned oats
1/4 cup packed brown sugar
2 Tbsp all-purpose flour
1/2 tsp cinnamon
1 Tbsp sugar
1/8 tsp ground ginger
1/8 tsp salt
3 Tbsp cold butter

Preheat oven to 375.  For filling, combine sugar and cornstarch in a small bowl.  Add berries and toss to coat evenly.  Pour into small casserole dish.  For topping, combine oats, brown sugar, flour, cinnamon, sugar, ginger and salt in small bowl.  Cut in cold butter using pastry blender, then mix with a fork until mixture resembles coarse crumbs.  Top berries with topping.  Bake 20-25 minutes or until oat mixture is golden brown and berries are bubbling around the edges.  Serve warm with vanilla ice cream.
