12 chicken tenderloins, chunked
2 cans chicken broth
1 box (7 oz) red beans and rice mix
1 can diced tomatoes, drained
3 new red potatoes, unpeeled and cubed
2 carrots, sliced
1 onion, chunked
In a large saucepan, combine chicken, broth, beans and rice, seasoning packet from mix, tomatoes, potatoes, carrots, and onion. Bring to a boil. Cover; reduce heat and simmer 20 minutes or until chicken is done.
