1 pkg yellow cake mix
1 1/4 cups buttermilk
4 egg whites
1 egg
1 pkg cream cheese, cubed
1 cup milk
1 pkg (1 oz) instant vanilla pudding mix
28 oz crushed pineapple, drained
1 carton (8 oz) cool whip
1/2 cup flaked coconut, toasted
In a bowl, beat cake mix, buttermilk, egg whites, and egg till moistened. Beat on high for 2 minutes. Transfer to a greased 13x9 pan. Bake at 350 for 25-30 minutes or until a toothpick inserted into middle comes out clean. Cool. In another bowl, beat cream cheese till fluffy. Gradually beat in milk. Gradually add pudding mix. Spread over cooled cake. Spoon pineapple over pudding mix. Top with cool whip. Sprinkle with toasted coconut. Store in refrigerator.
