Chicken Gumbo

3 Tbsp vegetable oil
1 pound chicken, cubed
1/2 pound smoked sausage, cut into 3/4” slices
1 bag (16 oz) frozen vegetables, broccoli corn and red pepper mix
1 can stewed tomatoes
1 1/2 cups water
Hot cooked rice

Heat oil in saucepan.  Add chicken and sausage; cook until browned, about 8 minutes.  Add vegetables, tomatoes, and water; bring to a boil.  Reduce heat to medium; cover and cook for 3 minutes.  Serve over hot cooked rice.
