Chicken Fried Rice

4 chicken breasts, cut into strips
2 tsp olive oil
1/2 cup sliced green onions
1/4 cup chopped red bell pepper
1 clove garlic
1/2 tsp ground ginger
2 eggs, whisked
3 cups cold cooked regular long grain rice
2 Tbsp soy sauce

In a skillet, sauté chicken in oil until done.  Remove from skillet.  In the same skillet, sauté green onion, red pepper, garlic and ginger 1-2 minutes.  Add eggs.  Cook over medium heat, stirring occasionally until set.  Return chicken to skillet.  Stir in rice and soy sauce.  Cook until heated through.

Serves 4
