Sweet N Sour Chicken

1 pound chicken breast, cubed
2 Tbsp oil
1/2 cup green pepper strips
1/2 cup red pepper strips
1 cup carrot strips
1 garlic clove, minced
1 Tbsp cornstarch
1/4 cup soy sauce
1 (8oz) can chunk pineapple with juice
3 Tbsp vinegar
3 Tbsp brown sugar
1/2 tsp ground ginger
Hot cooked rice

Brown chicken in hot oil in a large skillet.  Add peppers, carrot, and garlic; cook and stir 1-2 minutes.  Mix cornstarch with soy sauce; add to pan with pineapple and juice, vinegar, sugar, and ginger.  Bring to a full boil.  Serve over rice.
