Southern Style Oven Fried Chicken

1/2 cup all purpose flour
1/4 tsp salt
1/8 tsp cayenne pepper
3 oz buttermilk
3/4 cup cornflake crumbs
1 pound chicken breasts, boneless and skinless

Preheat oven to 365.  Lightly coat an 8x8 dish with cooking spray.  Combine flour, salt, and cayenne pepper together in medium bowl.  Place buttermilk and cornflake crumbs in 2 separate shallow bowls.  Roll chicken in flour mix and evenly coat each side.  Next, dip chicken into buttermilk and then cornflake crumbs.  Place coated chicken in a dish.  Bake until chicken is done (about 20 minutes).  There is no need to flip during baking.
