Pumpkin Cranberry Bread

3 cups all purpose flour
1 Tbsp plus 2 tsp pumpkin pie spice
2 tsp baking soda
1 1/2 tsp salt
3 cups sugar
1 can pumpkin
4 eggs
1 cup vegetable oil
1/2 cup orange juice or water
1 cup sweetened dried, fresh, or frozen cranberries

Preheat oven to 350.  Grease and flour dish that will be used for baking.  Combine flour, pumpkin pie spice, baking soda and salt in a large bowl.  Combine sugar, pumpkin, eggs, oil, and orange juice in a bowl; beat until just blended.  Add pumpkin mix to flour mix; stir just until moistened.  Fold in cranberries.  Spoon batter into baking dish.  Bake 60-65 minutes or until toothpick comes out clean.
