Pumpkin Bread

5 eggs
1 1/4 cups olive oil
1 can pumpkin
2 cups all purpose flour
2 cups sugar
2 pkg (3 oz each) cook and serve vanilla pudding mix
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt

In a bowl, beat eggs.  Add oil and pumpkin.  Beat until smooth.  Combine the rest.  Gradually beat into pumpkin mix.  Pour batter into greased loaf pans.  Bake at 325 for 5-55 minutes or until toothpick comes out clean.
