Potato Soup

1 onion, chopped
2 stalks celery, chopped
2 cans chicken broth
4 potatoes, peeled and cubed
1 pinch parsley
1 tsp garlic powder
Salt and pepper to taste
1 1/2 cups milk
1/2 cup potato flakes

Coat large pot with nonstick spray.  Over medium heat, add onion and celery and sauté for 10 minutes.  Add broth and potatoes and stir well.  Now stir in parsley, garlic powder, salt and pepper.  Bring to a boil, reduce heat to low and simmer for 20 minutes.  Add milk and continue to simmer for 10 minutes.  Finally, stir in potato flakes and heat.
