7 oz whole wheat egg noodles
10 oz mushrooms, sliced
1 large bell pepper, cut into strips
1 onion, chopped
1/2 lb lean ground beef
1 1/2 cup spaghetti sauce
1 can cream of chicken soup (reduced fat)
3/4 cup shredded cheddar cheese
1 (3 1/2 oz) pkg turkey pepperoni
2 Tbsp grated parmesan cheese
Preheat oven to 350. Spray a 2 qt baking dish with nonstick spray. Cook the noodles as directed. Rinse and drain. Spray a large skillet with nonstick spray. Cook mushrooms, bell pepper, and onion for 5 minutes. Add the beef and cook until browned. Add spaghetti sauce, soup, 1/2 cup cheddar cheese and noodles. Spoon into baking dish. Bake until hot, about 40 minutes. Top with remaining cheddar, pepperoni, and parmesan. Bake 5 minutes longer.
