Old Fashioned Beef Stew

1 pound stew meat
3 Tbsp flour
1 onion, chopped
1 can beef broth
2 cans stewed tomatoes
2 cans whole new potatoes, drained and cubed
1 can mixed vegetables, drained

Combine meat and flour in a bag, toss to coat.  Brown meat in 2 Tbsp oil.  Drain.  Add onion and cook until tender.  Add tomatoes and broth.  Boil, reduce heat.  Cover and simmer for 45 minutes to one hour.  Add vegetables.  Cook uncovered 5-10 minutes.

Serves 4
