Microwave Minestrone

1 cup sliced carrots
1 cup celery, sliced
1 cup sliced zucchini
1/2 cup diced yellow bell pepper
1 onion, chopped
1 banana pepper, seeded & chopped
1 Tbsp vegetable oil
1 can cannelloni or white kidney beans, drained & rinsed
1 can beef broth
1 can diced tomatoes
1 cup cooked pasta shells
1 tsp basil
1/2 tsp salt
1/4 tsp pepper

In a 2 quart microwave safe bowl, combine vegetables.  Drizzle with oil.  Toss to coat.  Cover and microwave on high for 5 minutes.  Stir in all other ingredients.  Cover and cook on high for 15 minutes.

Serves 5
