2 cups all purpose flour
1 cup butter, softened
1/2 cup plus 1 Tbsp powdered sugar
4 eggs
2 cups sugar
1 tsp baking powder
1/2 tsp salt
2/3 cup freshly squeezed lemon juice
Heat oven to 350. Beat together flour, butter and 1/2 cup powdered sugar in bowl until well blended. Press into bottom of 13x9. Bake at 350 for 25-30 minutes or until lightly golden. Beat eggs, sugar, baking powder, salt and lemon juice until smooth. Pour over hot crust. Bake 15 minutes more or until bubbly and lightly browned. Cool completely. Dust lightly with remaining powdered sugar. Store airtight at room temperature.
