Italian Zucchini

1 tsp minced garlic
1/2 small onion, diced
2 Tbsp canola oil
4 medium zucchini, sliced
1 tsp dried oregano
1/2 tsp salt
1/8 tsp pepper

In large skillet, cook and stir the garlic and onion in oil over medium heat for 1 minute.  Add zucchini, oregano, salt and pepper.  Cook and stir for 4-6 minutes or until the zucchini is crisp tender.

Serves 4
