Fast Fried Rice Bowl

1/2 cup minute white rice, uncooked
1/2 cup water
1/2 cup frozen mixed vegetables
1 egg
1 Tbsp balsamic vinaigrette dressing
1 Tbsp soy sauce

Place rice and water in bowl.  Add vegetables.  Pour egg over vegetables; cover.  Microwave on high 5 minutes.  Let stand, covered, 5 minutes.  Fluff with fork.  Add dressing and soy sauce.  Toss lightly to combine. 

Serves 1
