Chicken Osso Bucco

4 chicken breasts
1/4 cup flour
1 carrot, finely chopped
1 can stewed tomatoes, undrained
2 Tbsp sundried tomato vinaigrette dressing
1 tsp grated lemon peel
1 Tbsp lemon juice
1 1/2 cups minute rice, uncooked

Coat chicken with flour.  Place chicken and any remaining flour in crockpot.  Add all ingredients except rice; stir.  Cover and cook on low for 6-8 hours.  Cook rice as directed.  Stir chicken mixture to thicken sauce.  Serve over rice.
