Chex Caramel Corn

4 1/2 cups chex cereal
4 cups popped popcorn
1/2 cup honey roasted peanuts
1/4 cup butter
6 Tbsp packed brown sugar
2 Tbsp light corn syrup
1/4 tsp vanilla

Stir together cereal, popcorn, and peanuts in large microwaveable bowl; set aside.  Microwave butter, brown sugar, corn syrup, and vanilla in bowl on high for 2 minutes or until boiling, stirring after 1 minute.  Pour over cereal mixture, stirring until evenly coated.  Microwave 5-6 minutes, stirring and scraping bowl after every minute.  Spread on waxed paper to cool, stirring occasionally to break up.  Store in airtight container.
