Smoky Chicken Chili *

2 rotisserie chickens, shredded
2 tsp cumin
1 large yellow onion, diced
2 poblano peppers, chopped
3 cloves garlic, minced
2 tsp ground ancho pepper
1 1/2 tsp salt
1 tsp freshly ground black pepper
32 oz chicken broth
3 cans rotel
1 jalapeno, minced
2 chipotle chilis in adobo, minced
1 1/2 cups finely crushed tortilla chips
1 can cannellini beans, drained and rinsed
1 can black beans, drained and rinsed
1 can garbanzo beans, drained and rinsed
1 1/2 cups frozen whole kernel corn
Optional toppings: crushed tortilla chips, cilantro, sour cream, grated cheese, jalapenos, lime wedges

Add all ingredients to crock pot except optional toppings.  Cook on low 8 hours.  Top individual servings with desired toppings.
