Santa Fe Supper *

1 cup uncooked long grain rice
1 pound hamburger
2 small zucchini, sliced
1 onion, chopped
1 1/2 cups salsa
1/4 tsp salt
1/4 tsp pepper
1 cup (4 oz) pepper jack cheese, shredded
1 can chopped green chiles, drained
1 cup (4 oz) cheddar cheese, shredded

Cook rice according to package directions.  Cook hamburger, drain.  Stir in zucchini, onion, 1 cup salsa, salt and pepper.  Cook until vegetables are crisp-tender.  Add pepper jack cheese and chiles to rice.  Sprinkle cheddar cheese over beef mix.  Serve over rice with rest of salsa.
