Cheesy Chicken Simmer

2 tsp vegetable oil
1 pound chicken breast, boneless and skinless
2 cups frozen broccoli florets
1 can condensed cream of chicken soup
4 oz Velveeta, cut up
2 cups minute white rice, prepared according to package

Heat oil in skillet.  Add chicken, cook 7 minutes, turning after 3 1/2 minutes.  Add broccoli; stir.  Stir in soup and velveeta until well blended.  Reduce heat to medium; simmer 7 minutes or until chicken is cooked through.  Serve over the hot cooked rice.
