2 Tbsp olive oil
3/4 cup chopped onion
1/2 cup chopped celery
2 tsp garlic
1/2 cup parsley
1 tsp salt
1/4 tsp pepper
1 3/4 tsp chili powder
1 1/4 tsp cumin
3/4 cup salsa
2 eggs
1 1/2 pounds hamburger
3/4 cup bread crumbs
1/4 pound sliced mozzarella cheese
Heat oven to 350. Saute onion, celery, garlic, and parsley in olive oil until softened but not browned. Transfer vegetables to a large bowl. Add salt, pepper, chili powder, cumin, salsa, eggs, hamburger, and bread crumbs to vegetables. Mix well with hands. Transfer half of the mix to a 13x9 pan. Place mozzarella slices on top. Cover with rest of meat mixture. Bake 75-80 minutes.
