Barbecue Chicken and Rice Skillet

1 pound chicken, chunked
1 tsp vegetable oil
1 1/4 cups water
1/2 cup BBQ sauce
1 1/2 cups Minute white rice, uncooked
1 red pepper, chopped
1 cup chopped zucchini

Brown chicken in oil.  Add water, BBQ sauce, and rice.  Bring to a boil  Reduce heat.  Sprinkle with pepper and zucchini.  Cover.  Simmer 10 minutes.

Serves 4
