1 pound ground beef, browned and drained
1 can whole kernel corn, drained
1 can (8 oz) tomato sauce
1/2 cup water
1/2 cup chopped green pepper
1 envelope taco seasoning
1 pkg (8 oz) cornbread/muffin mix (and ingredients on box to make cornbread)
1 can (2.8 oz) french fried onions
1/2 cup shredded cheddar cheese
In large ovenproof skillet, combine browned ground beef, corn, tomato sauce, water, green pepper and taco seasoning. Prepare cornbread mix according to package directions for cornbread. Stir in half of the onions. Drop spoonfuls on top of beef mixture. Spread out with back of spoon (will not cover beef mixture entirely). Bake uncovered at 400 for 12-15 minutes. Sprinkle with cheese and remaining onions. Bake until cheese is melted and a toothpick inserted into cornbread layer comes out clean, about 3-5 minutes longer.
